Cauliflower is part of the Brassica family, which includes common veggies such as kale, cabbage, and broccoli.

Cauliflower is an excellent source of vitamin C and K. Vitamin C, which is also an antioxidant, can also be found in citrus fruit, broccoli and tomatoes. You need vitamin C for the growth and repair of tissue in all body parts. It helps keep your skin looking youthful, it helps repair wounds and maintain healthy bones and teeth. You also need vitamin C to help absorb iron.

Vitamin K is a fat-soluble vitamin that is stored in your fat and liver. Vitamin K helps clot blood during an injury and contributes to keeping your bones healthy. You can also find this vitamin in leafy greens, so eat up that kale!

How The Fuck Do You Make It Taste Good?

When I was a kid the only way I ever ate cauliflower was steamed. I hated it. Nowadays, especially thanks to the low carb movement people have become very clever with their use of this brassica plant.

These are my 4 favourite ways to use cauliflower:

  • BBQ roasted: Probably the most low maintenance thing you to make with this albino plant. Cut into chuncks, toss in 1 Tbsp of olive oil with salt, pepper and spices of choice and char on the grill. Taste test to desired tenderness, but I like mine still a little crunchy on the inside (15mins on the grill).
  • Cauliflower pizza: This is definitely not a quick meal to make, but once you get the process down, it is truly an amazing and delicious pizza version. Wayyyy healthier then actual pizza and just as flavourful! My advice to you is make sure you have a cheese cloth to wring out the excess liquid.
  • Cauliflower rice: This is a pretty fast one too, you’ll absolutely need a food processor for this one (you’ll need it for the pizza too). Once you chop up your cauliflower into little rice size bits, you can either sautee it up with some ginger, garlic and soy sauce or I like to throw mine into a salad for a little extra texture. It’ll soak up some of the dressing and sortof act like a feta topping.
  • Mixed Veggie Stir-Fry: I find an excellent way to get in all your veggies without eating another salad is to stir fry them. This can be done pretty quickly, with little hassle and way less dishes. Basically just cut up your veggies more of less the same size and throw them into a big pan or wok. Stir fries are fantastic because you can make them really healthy since you can control what type of oil (macadamia or coconut oil for high heat) and how much to use.

  1. Cauliflower is rich in flavonoids and phytonutrients. Flavonoids are part of a nutrient group that is famous for its antioxidants and anti-inflammatory health benefits.  Phytonutrients can help the body ward off disease.
  2. Despite its lack of colour, cauliflower contains the same nutrient richness as its fellow green cruciferous vegetables like broccoli or kale.
  3. Cauliflower nearly as much vitamin C as your average orange.
